Congratulations to CCSD Parent Recipe Contest Winner

A Sixes Elementary School dad is the winner of this year’s annual CCSD School Nutrition Parent Recipe Contest!

Congratulations to Philip Lombardi, dad of second-grader Liam and kindergartner Luke, who earned the top prize for his Apple Harvest Parfait.  His recipe was enjoyed by students across CCSD today as part of the celebration.  Thank you to Credit Union of Georgia, a CCSD Partner, for sponsoring the $100 gift card prize, and thank you to our contest judges and to our School Board members for their longtime support of our School Nutrition program.

The seventh annual recipe contest, which highlights the designated state fruit or vegetable each year in honor of Farm to School Month, this year celebrated Georgia grown apples with the theme “Apple of Our Eye.”  For the judging process, the recipes were prepared by CCSD School Nutrition staff and then tested by a panel of judges.  This year’s judges were School Board members Chance Beam and Kelly Poole, Joanna Scott of the Cherokee County UGA Extension Office, Adrienne Holloway of the Georgia Department of Education’s School Nutrition department, and CCSD Chief Financial Officer Ken Owen.

Apple Harvest Parfait

Here’s the winning recipe:

Apple Harvest Parfait 
Yield: Six servings

3 apples 
1 qt. Greek vanilla yogurt
3 Tbsp. cinnamon
1 1/2 c. favorite granola
6 clear glasses/jars/cups

Blend cinnamon and yogurt together a few hours ahead of time to allow for cinnamon to mellow and not taste so harsh.  Core and chop apples into bite-size chunks. This can be done early, if needed, with a 4:1 lemon water soak (four parts water to one part lemon juice).  Allow to soak for at least 30 minutes.  This will help apples from oxidizing and turning brown.  To assemble, in each cup layer ¼ c. chopped apples, 2 tbsp. spiced yogurt, and 1/8 c. granola, then repeat those layers one more time.
